Recipe Wednesday: Black bean quesadillas

Black beans are chock full of protein, inexpensive and full of flavor.  This recipe is a staple in my house for three reasons: it’s easy to make, takes less than 15 minutes and, for less than $5 you can feed a family of four.

Ingredients

1 can black beans, rinsed and drained

1 can diced tomatoes

1 clove garlic, minced

4 wheat tortillas

Monterrey jack cheese, shredded

1 avocado, sliced

Directions

Heat broiler.  Cook black beans, tomatoes and garlic in a pan over medium heat until juice from tomatoes reduces by half, about 10 minutes.  Spoon mixture onto tortillas, then top with cheese and fold over.  Broil for five minutes, or until tops of tortillas turn golden brown.  Top with avocado slices and serve immediately.
