Salmon paired with some fresh summer veggies is delicious, nutritious and super easy to prepare. Quick, colorful and complete. Perfect for a weeknight dinner!
Grilled salmon ingredients
1 garlic clove, minced
2 TBS Dijon mustard
1/2 tsp rosemary
1/2 tsp thyme
1 TBS dry white wine
1 TBS extra virgin olive oil
1/2 pound salmon fillet
Mix garlic, mustard, rosemary and thyme. Slowly stir in wine and oil. Sprinkle salmon with salt and pepper and pour mustard mixture over salmon. Grill until salmon is done, or pale pink in the center.
Zucchini and squash ingredients
1 summer squash, sliced
1 zucchini, sliced
1 TBS extra virgin olive oil
Salt and pepper
Heat oven to 350 degrees. In a medium bowl, mix squash, zucchini, extra virgin olive oil and salt and pepper. Spray a baking sheet with non-stick spray and arrange veggies flat on sheet. Bake 10-15 minutes or until veggies are light brown.
