Recipe Wednesday: Picnic foods your whole family will love

Warm weather has finally arrived and what better way to enjoy it than with a picnic the whole family can enjoy!  We’ve compiled our favorite picnic foods that are fresh, easy to prepare and full of flavor, so grab your sunscreen and bug spray, remember to pack foods that will be eaten last at the bottom of the cooler and have fun!  Each recipe serves four.

Turkey and brie sandwich

1/4 cup raspberry jam

2 TBS mayo

8 slices of brie

Smoked turkey breast, sliced thin

Mixed greens

Pita bread

Combine raspberry jam and mayo and spoon onto one side of pita bread.  Layer two slices of brie on top, followed by turkey slices, and topped with mixed greens.

Balsamic pasta salad

1 pound tri-color rotini pasta

1 large head broccoli, cut and blanched

1 (10 ounce) can artichoke hearts, drained and chopped

1/2 cup balsamic vinegar

1 1/2 cup extra virgin olive oil

1 TBS McCormick Italian herbs

Salt and pepper to taste

Cook pasta over medium heat 8-10 minutes or until al dente; drain and chill.  Cut broccoli into florets, blanch in hot water and chill.  Mix all ingredients in large bowl and refridgerate until ready to serve.

Deviled eggs

4 hard-boiled eggs

2 TBS mayo

1 TBS dijon mustard

1/2 tsp chili powder

Salt and pepper to taste

Fresh parsley, minced

Cut hard-boiled eggs in half; remove yolks and place in a large bowl.  Combine mayo, mustard, salt and pepper with the egg yolks and blend with a fork until smooth.  Fill mixture into cut egg halves, sprinkle with chili powder and parsley.

Shrimp salad

1 pound baby shrimp, cooked and chilled

1/2 cup mayo

2 tsp Old Bay Seasoning blend

3 stalks celery, diced small

Handful of roasted red peppers, diced small

Combine all ingredients in bowl.  Adjust mayo and seasoning to taste.  Serve with crackers.
