Recipe Wednesday: Mahi mahi with sage-browned butter

This simple yet flavorful recipe takes virtually no time to make, is super healthy and will have your family asking for seconds.  Serve with brown rice and asparagus.

4 TBS butter

2 TBS chopped fresh sage

2 TBS lemon juice

4 (4 oz) mahi mahi fillets

salt and pepper, to taste

1 TBS extra virgin olive oil

Melt butter in a skillet over medium-low heat until it begins to foam, about 5 minutes.  (Don’t turn the heat too high, or you will burn.)  Immediately remove from heat and stir in sage and lemon juice.  Cook, stirring often, until sage is crisp and butter is golden brown; keep warm.

Season fish with salt and pepper and drizzle olive oil on top.  Heat a large skillet over medium heat; add fish and cook 3 minutes on each side or until fish flakes with a fork.  Pour butter mixture over fish and serve immediately.
