Recipe Wednesday: Savory chicken enchiladas

A rotisserie chicken from the grocery store makes a fast and easy classic Mexican dish that will have your family begging for seconds!

Meat of one rotisserie-style chicken, shredded

1 large onion, chopped

3 garlic cloves, chopped

1 (4 oz.) can green chilies

1 TBS fresh cilantro

1 large can enchilada sauce

2 cups shredded monterey jack cheese

8 flour tortillas

Saute onion in 1 TBS extra virgin olive oil over medium heat until tender, about ten minutes.  Add garlic and saute additional two minutes.

Preheat oven to 375 degrees.  Stir together chicken, green chilies, onion, garlic, cilantro, 1 cup enchilada sauce and 1 cup cheese.

Spoon mixture into center of each tortilla; roll tortillas and place, seam side down, in a lightly greased 9×12 inch baking pan.  Pour remaining sauce over enchiladas and then top with cheese.  Bake for 15 minutes or until cheese is browned.
