Recipe Wednesday: Classic chicken marsala

If you’re looking for a new recipe for plain old chicken, chicken marsala should be at the top of your list.  This recipe is not only quick and easy to make, it’s also incredibly flavorful! 

4 chicken breasts

1/4 cup flour

Salt and pepper, to taste

1/4 cup extra virgin olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 (8 oz) carton of mushrooms

1 green bell pepper, diced

1/2 cup marsala wine

1/2 cup dry white wine

1 1/2 TBS butter

Season chicken breasts with salt and pepper and dredge in flour.  Heat olive oil in a saucepan over medium heat.  Add chicken, onions and mushrooms.  Cook until chicken is cooked through, stirring occassionally.

Add marsala wine, white wine and butter.  Cook 5 more minutes or until sauce thickens.  Serve with angel hair pasta and a salad and you’re set!
