If you’re a fan of the Food Network, chances are you have seen the lovely Giada DeLaurentiis make this light and flavorful dish at least once on her show, Everyday Italian. What I love best about this recipe is that it’s easy enough to make on a weekday, but yummy enough to serve to guests, too!
1 box penne pasta
3 TBS extra virgin olive oil
2 boneless, skinless chicken breasts, cut into cubes
1 tsp herbes de Provence (or Italian herb seasoning)
Salt and pepper, to taste
1 cup low-sodium chicken broth
2 cups heavy cream
Pinch of cayenne pepper (or chili powder)
1 TBS fresh squeezed lemon juice
Cook pasta according to package directions and drain. Season chicken cubes with salt, pepper, herbes de Provence and cook over medium heat in olive oil until cooked through.
Remove chicken from skillet and set aside, keeping warm. Pour off any excess oil from pan. Add chicken broth to pan and cook over medium-high heat, scraping any browned bits off the bottom of the pan. Add the cream and cayenne. Reduce heat to medium and simmer for ten minutes.
Add the pasta, chicken, pinch of salt and pepper and lemon juice to the mixture. Toss to make sure everything is coated. Serve with a salad and enjoy!
