Recipe Wednesday: Chicken with herbed goat cheese and basil

If you’re fresh out of ideas for reinventing plain old chicken, this is the recipe for you!  Not only is this dish incredibly flavorful, but it’s one of the easiest to make-perfect for when you’re in a pinch and need to whip up something healthy and tasty!  Serve with brown rice and a side salad and you’re ready to roll!

4 skinless, boneless chicken breasts

4 oz soft, herbed goat cheese

Small bunch of fresh basil leaves

Salt and pepper, to taste

Preheat oven to 350 degrees.  Using a sharp knife, make a slit along the long side of each breast, creating a pocket.  Divide the cheese evenly between all four breasts and tuck three basil leaves in each. 

Close the openings and season chicken with salt and pepper.  Line breasts on a baking sheet coated with cooking spray and bake for 30 minutes or until golden brown.
