Recipe Wednesday: Baked orzo with shrimp, fontina and peas

This is another Giada De Laurentiis creation, only I added shrimp to take it from a side dish to a main course.  You can easily make it with other kinds of pasta, like rotini and ditalini, in place of the orzo.  Serve with a salad and you’re set!

1/2 pound large shrimp, precooked

1 package orzo

1 onion, chopped

8 oz. mushrooms, sliced

1 cup Marsala wine

1/2 cup heavy cream

8 oz fontina cheese, shredded

1 cup peas

salt and pepper to taste

Preheat oven to 350 degrees.  Cook orzo until tender, about 7 minutes.  Set aside.

Saute onion and mushrooms in 1 TBS extra virgin olive oil until tender.  Add marsala wine and cook until reduced by half, about 5 minutes. 

Add mushroom mixture and shrimp to orzo, then add the cream, fontina, peas and salt and pepper.  Mix together and spread in a 9×13 inch casserole dish.  Bake 25 minutes, until golden on top.
