Recipe Wednesday: Dinner for one

When my husband was deployed last year, one of my top excuses for not cooking dinner was, “Ugh! I don’t want to have all of those leftovers!” I know now, with a little effort and a dash of creativity, I can adapt almost any recipe to suit “just-me” when my husband is deployed or on TDY. Here are a few of my favorite “dinner for one” resources and my go-to “just-me” recipe when I’m in a pinch!

Bethenny Bakes

My favorite of Bravo’s Real Housewives is the sassy and sarcastic NYC entrepreneur Bethenny Frankel. She had me at, “Skinny Margarita.” It turns out the natural foods chef, being a single lady herself, likes to write her recipes for one. She has dozens on her website, but I recommend buying her book, Naturally Thin: Unleash Your SkinnyGirl and Free Yourself from a Lifetime of Dieting to get them all, along with some great Skinny Girl tips.

Martha to the rescue

I subscribe to Martha Stewart’s Everyday Food magazine and it never ceases to amaze me how easily  adaptable many of the recipes are to feed one. But you don’t have to be a subscriber to get all the recipe goodness! Log on to the website to find many of the delicious recipes you can get in the mag.

Cook once, eat all week with Weight Watchers

I’m a huge proponent of Weight Watchers. I think it’s a great program to enroll in if you want to lose weight and I think their recipes are healthy, delicious and so simple to make. It was Weight Watchers that taught me how to Cook Once and Eat All Week. Take some time on a Sunday afternoon to get your hands dirty (I promise, this can actually be therapeutic) and prep all your meals for the week ahead in advance.

Recipe: Tortilla pizza

Heat up your outdoor grill, grill pan or tabletop grill. Take any kind of tortilla. They come in such fun festive flavors like spinach or sun-dried tomato. Spread a thin layer of pizza sauce. Add toppings – and be creative! You can have pineapple and Canadian bacon for a Hawaiian flair, or toss on a load of leftover sauteed veggies for a meatless version. Finally sprinkle mozzarella or any other combination of cheese you prefer. Grill until the cheese is melted. Slice it up and enjoy your personal thin crust, healthy and wholesome, made-to-order pizza pie!
