Recipe Wednesday: Perfect Peanut Butter Cookies

by Kelly October 27, 2010

I have a major sweet tooth and try to always make sure I have ingredients in my pantry to whip up something sweet at the drop of a hat.  My friend passed on her favorite recipe for chewy peanut butter cookies earlier in the week so I made a batch last night.  In the past, I’ve had difficulty getting the consistency right, but this time I just added a little more flour than the recipe called for and they were fine.  (I’ve tweaked the measurements… Read the rest

Networking…it’s easier than you think!

by Kelly October 25, 2010

Having had a heavy sales background, networking was like second nature to me.   Put me in a room full of strangers and, more than likely, I was walking out of there at the end of the night with a pocket full of business cards.  Friends would tell me the idea of striking up a conversation with a total stranger was intimidating, but to me, it was a surefire way to make acquaintances-both professionally as well as socially.

After relocating to a new base last February, my… Read the rest

by Kelly October 20, 2010

Fall is here in full effect and with the cooler temperatures, there is nothing better than curling up on the couch with a soft blanket and a bowl of rich, hearty soup with chunky veggies and loads of flavor.  No one does comfort food better than the Barefoot Contessa, and this recipe is as healthy as it is delicious.  Serve it with some crusty bread, pop in a DVD  and enjoy a great Fall day!

2 cups chopped onions

2 cups chopped leaks (white parts only)

2 cloves… Read the rest

The power of saying “Yes” at work

by Kirsty October 6, 2010

Last month we discussed why saying “yes” to everything in the office isn’t always healthy. Indeed it’s not. It does no one good to over promise, over extend yourself and ultimately under-deliver. But as military spouses, we are always quick with a “yes sir!” or a “yes ma’am!” Master multitaskers that we are: yes we will have that report ready by the end of the day! Yes, we will get those care packages… Read the rest

Recipe Wednesday: The best guacamole ever!

by Kelly September 15, 2010

I love Mexican food.  Like, LOVE it.  My sweet friend, SJ, was gracious enough to share her recipe for the best tasting guacamole I have ever had.  And it was so incredibly easy!  Impress your guests with a bowl at your next get together and you will have them begging you for the recipe, too!

1 clove garlic, chopped

1 1/2 tsp sea salt

1 large jalapeno, minced

3 ripe avocados

1 small onion, chopped

1 medium tomato, seeded and chopped

juice of 1 lime… Read the rest

The art of saying “No” at work

by Kelly September 10, 2010

Does your boss have a knack for heaping one last thing on your plate five minutes before the weekend?  Do you work with someone who turns to you whenever he or she needs help with anything?  Have you noticed how much easier it is to say yes, even when it means putting your own responsibililities and obligations on the back burner to do so?

Yes, the economy is bad and you may be grateful just to have a job, but that doesn’t necessarily mean… Read the rest

Recipe Wednesday: Chicken marsala

by Kelly August 25, 2010

Do you have a family recipe you turn to whenever you’re in a pinch and need something delicious and hearty?  For me, I have quite a few of them and my grandmother’s chicken marsala is definitely one of them.  I use chicken tenderloins instead of chicken breasts (they cook quicker and have a bit more flavor, in my opinion).  This is a no-fail recipe if you’re cooking for company, a special dinner with the husband or just because.  Serve over angel hair pasta, along… Read the rest

by Kelly August 11, 2010

When it comes to chocolately goodness, it doesn’t get much better than a chewy, fudgy brownie…except, of course when it’s combined with cheesecake and peanut butter!  These yummy brownies got a standing ovation at the barbeque I brought them to last week…just one bite and you’ll know why.

1/3 cup sugar

1 egg

1/4 cup peanut butter

Recipe Wednesday: Easy, tasty summer appetizers

by Kelly August 4, 2010

In the summer, my grill gets one heck of a workout.  To me, there’s nothing better (or easier) than firing up that bad boy and throwing on some chicken, lots of fresh veggies, even bread.  Since the completion of our in-ground swimming pool, we’ve hosted quite a few impromptu get togethers this summer…sure, it’s quick and easy to make a few burgers and some chicken, but this year I decided to get creative with some appetizers to really get the party going.  Here are… Read the rest
